TASTE BUD TUESDAY - Mays Lick Apple Salad

This is a tasty salad. I don't usually like this type of salad but this one I requested the recipe. Someone from work brought it to a dinner a while ago and it was so tasty and refreshing. Hope you try it. Enjoy!! --Quiltpecan

1 (8 oz) can crushed pineapple
1/2 cup sugar
1 (3 oz) pkg lemon gelatin
8 oz cream cheese, softened
1 cup chopped, unpeeled apple
1/2 to 1 cup chopped pecans
1 cup chopped celery (I have had this recipe with and without celery, add by taste)
1 cup whipped topping

Bring the undrained pineapple and sugar to a boil in a saucepan. Boil for 3 minutes. Add the gelatin. cook until the gelatin is dissolved, stirring constantly. Add the cream cheese and mix well. Remove from the heat to cool. Fold in the apple, pecans, celery and whipped topping. Spoon into a 9x9 inch dish. Chill until firm. Cut into squares to serve.
